Method

  1. Cook the Pasta
    Boil the pasta according to the packet instructions. Drain and leave it to cool completely.
  2. Make the Dressing
    In a large bowl, stir together Shemin’s Curry Paste and Greek yogurt until smooth.
  3. Mix it All Together
    Add the cooled pasta, cucumber, red pepper, red onion, and coriander to the bowl. Mix until everything is well coated in the curry yogurt dressing.
  4. Season & Chill
    Add salt and pepper to taste, then cover and chill in the fridge until ready to serve.
