- Cook the Pasta
Boil the pasta according to the packet instructions. Drain and leave it to cool completely. - Make the Dressing
In a large bowl, stir together Shemin’s Curry Paste and Greek yogurt until smooth. - Mix it All Together
Add the cooled pasta, cucumber, red pepper, red onion, and coriander to the bowl. Mix until everything is well coated in the curry yogurt dressing. - Season & Chill
Add salt and pepper to taste, then cover and chill in the fridge until ready to serve.
