- Crack the Cucumber
Bring a large saucepan of salted water to the boil. Meanwhile, place the cucumber cut-side down on a chopping board and bash lightly with a rolling pin until it cracks. Roughly chop and mix into the dressing ingredients in a bowl. Set aside. - Cook the Noodles
Add the noodles to the boiling water, then take off the heat and leave to stand for 5 minutes. Drain, rinse under cold water and shake dry. - Toss & Serve
Add the noodles and salad onions to the cucumber and dressing. Toss everything together. Divide between two bowls, top with flaked salmon and finish with a good pinch of Shemin’s Chilli Garlic Salt. Serve and enjoy.
