Shemin’s Indian Curry Paste

Ingredients

  • 2 peppers, cut into wedges
  • 2 potatoes, peeled and diced
  • 700g chicken thigh fillets
  • 1 pot (100g) Shemin’s Tikka Paste
  • 150g natural yoghurt or 400g coconut milk (alternative option)
  • 100g broccoli
  • A handful of cherry tomatoes
  • 1 red chilli, sliced (optional)
  • 1–2 tbsp oil (olive or vegetable)
  • Pinch of salt (optional)
  • Knob of butter (to finish)

How to make Chicken Tikka Traybake

Prepare the tray

Preheat the oven to 200°C. Place the peppers, potatoes and cherry tomatoes into a large, shallow roasting tray.

Make the marinade

In a small bowl, mix the Shemin’s Tikka Paste with the yoghurt (or coconut milk if using). Pour half of the marinade over the vegetables, add the oil and a pinch of salt (if using), then toss to coat.

Step 3

Coat the chicken thighs in the remaining marinade. Do the same with the broccoli, then set the broccoli aside.

Step 4

Lay the marinated chicken on top of the vegetables, making sure everything is in a single layer. Roast for 30 minutes.

Step 5

Add the broccoli to the tray and return to the oven for a further 15 minutes. Check the chicken is cooked through — it should be piping hot with no pink in the centre.

Step 6

Remove the tray from the oven and add a knob of butter, allowing it to melt into the sauce for extra richness. Scatter over the sliced red chilli (if using) and serve straight from the tray.

Tips

  • Don’t overcrowd the tray – Make sure everything sits in a single layer so the vegetables roast rather than steam.
  • Chicken thighs work best – They stay juicy at high heat and take on the marinade beautifully.
  • More flavour? You can marinate the chicken up to 24 hours ahead for even deeper flavour.
  • Use what you’ve got – Courgettes, red onion, cauliflower or leftover roast potatoes all work well in this traybake.

Shemin’s Tandoori Chicken

Homemade tandoori chicken is fantastically easy to do. Tender and succulent with a hint of spice, a great recipe for the BBQ in summer or to make under the grill or in the oven. You can make a super quick version of this with just our Tandoori Blend, yoghurt, ginger, garlic and salt as the marinade, it is still very delicious. Try this recipe with Shemin’s Curry Powder too.

 

Ingredients

  • 3 Spring onions, sliced thinly
  • 1 tbsp Crushed garlic
  • 3 tbsp Shemin’s Tandoori Spice Blend
  • 2 tbsp Fresh chopped coriander
  • 1 tbsp Fresh chopped mint
  • large pinch Salt (optional)
  • 2 tbsp Creme fraiche or natural yoghurt
  • 1 tbsp Single cream
  • 2 Fresh chillies, sliced (optional)
  • 700g Boneless chicken thighs or breast, cut into large chunks or strips

Cucumber & Mint Raita

  • 250ml Natural yoghurt
  • ½ Cucumber, finely chopped
  • handful Mint leaves, chopped
  • large pinch Salt
  • 1 Fresh chilli, finely chopped (optional)

Method

  1. Mix all the ingredients apart from the chicken together in a large glass bowl. Add the chicken to the mixture and coat well. Leave to marinate for at least a couple of hours.
  2. Cook on a high heat on the BBQ or under the grill on high, turning occasionally until slightly charred and cooked through. If using the oven, then cook for 20 mintues at 100°C / 180 Fan / 400°F / gas mark 6 and then check if done.
  3. Make the cucumber and mint raita by mixing together all the ingredients.
  4. Serve with rice or in a roti/naan with salad and the raita on top to create a kebab house Chicken Shish style wrap.

Tips

  • To make this recipe 0 syns, use fat free yoghurt and skip the single cream!
  • You can make a super quick version of this with just yoghurt, ginger, garlic and salt as the marinade. Squeeze some lemon over before serving.
  • Try this exact recipe with Shemin’s Curry Powder too.
  • Use this marinade for other meats and vegetables, it will work great. Also try it with meat alternatives if you are vegetarian.
